Tannase is a kind of tannin ester hydrolase obtained by cultivating fungal strains through submerged fermentation, and then purifying and extracting them through microfiltration, ultrafiltration and vacuum freeze-drying techniques. It can hydrolyze the ester bonds and phenol carboxylic acid bonds in gallic acid tannins to produce gallic acid and glucose, and it can also synthesize gallic propyl ester from gallic acid and propanol. It can also hydrolyze the ester-type catechins in tea to prepare catechin monomers, and it can also be used as a food additive in the development of tea beverages.
