The substrate of lipase is triglyceride with long-chain fatty acid, one of the most important features of lipase catalysed reaction is that it can only act in non-homogeneous system, i.e. on oil or fat-water interface, and it has no effect on homogeneously dispersed or water-soluble substrate, and even if it has effect, it is also very slow, so lipase can be said to be an enzyme that is specially used for hydrolysis of oil and fat on the interface of oil and water in non-homogeneous or water-insoluble system. Lipase mainly catalyses the following reactions.
① hydrolysis: RCOOR’+ H.O ↔ RCOOH + R’OH
② ester synthesis: RCOOH + R’OH ↔ RCOOR’+ H,O
(iii) Ester exchange reaction: RCOOR’+ R “COOR*↔ RCOOR*+ R’COOR” (ester exchange)
RCOOR’+ R’OH ← RCOOR “+ R” OH (alcoholysis)
RCOOR‘+ R’COOH ← RCOOH + R’COOR’ (acidolysis)
Lipase has a pivotal role in the catalytic synthesis of biodiesel, compared with the chemical synthesis of biodiesel, it has the advantages of mild conditions, small amount of alcohol, relatively simple separation process of by-products, less wastewater, low equipment requirements, easy collection of products, basically no pollution emissions. Lipase is a kind of biological catalyst, which can not only catalyse the hydrolysis of fatty acid glycerides at the oil-water interface, but also effectively catalyse the esterification and transesterification reactions. Lipase has the advantages of regional selectivity, stereoselectivity, high stability, inhibition of side reactions involving water, and the enzyme itself is insoluble in organic solvents easy to recycle and use, and the separation and purification of the products after the completion of the reaction is also easier, especially its stereoselective catalytic properties can complete the separation of chemical compounds that are difficult to separate by chemical method, asymmetric synthesis and so on. Lipase is an excellent catalyst for transesterification reaction with fatty acid glycerides.

Lipase for feeding is extracted and refined by deep liquid fermentation of Aspergilus niger strain selected independently. The enzyme catalyses the hydrolysis of triglyceride in the digestive tract of animals, which can make up for the problem of insufficient secretion of endogenous lipase in animals at specific stages or under stress, improve the digestion and utilisation of fats and oils in the feed, and enhance the level of available energy in the feed.
