Product Description
Trehalase (a non-starch polysaccharide enzyme) is produced from selected high-quality strains through submerged fermentation, extraction and purification. Trehalase is a type of glucosidase that hydrolyzes trehalose into two molecules of glucose. It is mainly used in the production of fermented products, including industries producing amino acids (glutamic acid, lysine, methionine, threonine, etc.), organic acids (citric acid, lactic acid, etc.) and alcohol.
Application Information
During alcohol fermentation, the depletion of nutrients and increase in alcohol content in the later stage of fermentation cause yeast cells to produce and accumulate trehalose to improve their tolerance. Consequently, residual sugars contain a relatively high level of trehalose and the ethanol yield decreases. Adding trehalase hydrolyzes trehalose into glucose and can improve ethanol yield. In monosodium glutamate production, adding trehalase during fermentation can reduce sugar consumption and improve the sugar-to-acid conversion rate.
