Principe<\/p>\n

\u03b2-amylase is een exonuclease dat begint aan het niet-reducerende uiteinde van vloeibaar gemaakt zetmeel en het sequentieel hydrolyseert volgens maltose-eenheden, terwijl de Walden-transpositiereactie optreedt, zodat het product wordt getransformeerd van \u03b1-type naar B-type maltose. Het kan de a-1,6-glycosidebinding aan de tak van zetmeel niet hydrolyseren en de afbraak van zetmeel stopt bij 2~3 glucoseresiduen v\u00f3\u00f3r de 1,6-binding, dus de geproduceerde maltose is in principe glucosevrij.<\/p>\n
