It can be used for debittering protein hydrolysates, seasoning processing, the preparation of bioactive peptides, plant protein processing and related applications.<\/p>\n<h2><strong>Application Information<\/strong><\/h2>\n<p>Aminopeptidases are exopeptidases that cleave amino acid residues from the N-terminus of polypeptide chains, releasing free amino acids. Their cleavage sites complement those of endoproteases. During enzymatic protein hydrolysis, their synergistic action with endoproteases can effectively increase the degree of hydrolysis and the content of free amino acids while improving the flavor of the hydrolysate. Aminopeptidase is generally not used alone and should be used together with an endoprotease.<\/p>\n<p><em>Identifier note: Aminopeptidase is a general product name.
