Ha un elevato contenuto di proteine e aminoacidi essenziali e la sua composizione \u00e8 ragionevole ed equilibrata. \u00c8 una materia prima proteica vegetale di alta qualit\u00e0 per l'allevamento. Tuttavia, poich\u00e9 la farina di soia contiene una serie di fattori antinutrizionali, riduce la digestione, l'assorbimento e l'utilizzo dei nutrienti da parte del bestiame e ha persino un impatto negativo sulla crescita, lo sviluppo e la salute degli animali. La farina di soia fermentata \u00e8 prodotta a partire da farina di soia di alta qualit\u00e0 come materia prima. Utilizza una combinazione di fermentazione microbica e idrolisi enzimatica proteolitica per rimuovere molti dei fattori antinutrizionali presenti nella farina di soia. Utilizza la farina di soia come materia prima e aggiunge lievito, batteri lattici, Bacillus subtilis e proteasi durante il processo di fermentazione allo stato solido per ridurre il contenuto di fibra grezza, polisaccaridi non amidacei e proteine antigeniche nella farina di soia, migliorandone cos\u00ec la qualit\u00e0.<sup>[6]<\/sup>. tempo di fermentazione &gt; temperatura. Poich\u00e9 i risultati non hanno mostrato un effetto significativo dei rapporti acqua\/materiale di 1:0,6 e 1:0,8, n\u00e9 una differenza significativa tra le temperature di fermentazione di 33 \u00b0C e 37 \u00b0C e i tempi di fermentazione di 60 h e 72 h, sono state adottate le condizioni A2B2C2, economicamente vantaggiose e adatte al controllo della produzione su larga scala, ossia un rapporto acqua\/materiale di 1:0,6, una temperatura di fermentazione di 37 \u00b0C e un tempo di fermentazione di 60 h.<\/p>\n<p><b>2Applicazione della proteasi nella fermentazione della farina di soia<\/b><br \/>\nI fattori antinutrizionali presenti nella farina di soia si dividono in due categorie: fattori antinutrizionali stabili al calore, tra cui principalmente le proteine antigeniche della soia (globulina e \u03b2-conglicinina) e gli oligosaccaridi della soia (principalmente raffinosio e stachiosio); e fattori antinutrizionali sensibili al calore, tra cui l'inibitore della tripsina, l'ureasi e le lectine.<sup>[7]<\/sup>. I fattori antinutrizionali sensibili al calore possono essere inattivati dal riscaldamento, ma i fattori antinutrizionali stabili al calore, come le globuline, la \u03b2-conglicinina, il raffinosio e lo stachiosio, non vengono facilmente distrutti durante la lavorazione generale dei mangimi.<sup>[8]<\/sup>. In questo esperimento \u00e8 stata studiata l'applicazione della proteasi acida AP-10, della proteasi alcalina AP-20 e delle loro combinazioni nella farina di soia fermentata, in condizioni di un rapporto mangime\/acqua di 1:0,6, una temperatura di reazione di 37\u00b0C e un tempo di fermentazione di 60 ore.<\/p>\n<p><b>2.1 Ricerca sull'applicazione della proteasi acida nella farina di soia fermentata<\/b><br \/>\nQuesto documento studia l'applicazione di<b> Proteasi acida Anji AP-10 in farina di soia fermentata<\/b> a diversi gradienti di concentrazione. I risultati mostrano che con l'aumento dell'aggiunta di enzimi, il contenuto di piccoli peptidi nella farina di soia fermentata aumenta gradualmente e il suo contenuto di piccoli peptidi \u00e8 superiore a 12%, il contenuto di proteine grezze \u00e8 superiore a 50% e le proteine alcalino-solubili sono circa 70%.
