Parmi les diff\u00e9rentes m\u00e9thodes de conversion, celle qui offre le meilleur rendement et la meilleure puret\u00e9 est l'utilisation de m\u00e9thodes catalys\u00e9es par des enzymes, telles que l'\u03b1-L-rhamnosidase des micro-organismes et l'hesp\u00e9ridinase. L'\u03b1-L-rhamnosidase est g\u00e9n\u00e9ralement combin\u00e9e \u00e0 la \u03b2-D-glucosidase pour former la naringinase qui joue un r\u00f4le de catalyseur. Dans les premi\u00e8res \u00e9tudes, les chercheurs ont assimil\u00e9 le concept d'\"\u03b1-L-rhamnosidase\" \u00e0 celui de \"ningrinase\". Commen\u00e7ons donc par pr\u00e9senter les connaissances de base de l'\u03b1-L-rhamnosidase et de la naringinase. <a href=\"https:\/\/longchangchemical.com\/fr\/product\/naringinase-cas-9068-31-9\/\" target=\"_blank\" rel=\"noreferrer noopener\">naringinase<\/a>.<\/h4>\r\n\r\n\r\n\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-4465\" src=\"https:\/\/longchangchemical.com\/wp-content\/uploads\/2021\/03\/enter.jpg\" alt=\"\" \/><\/figure>\r\n\r\n\r\n\r\n<h4 class=\"wp-block-heading\">La naringinase peut hydrolyser les substances am\u00e8res telles que la naringine et l'hesp\u00e9ridine pr\u00e9sentes dans les agrumes. Elle est donc utilis\u00e9e pour d\u00e9sam\u00e9riser les jus d'agrumes et porte son nom. Le principal composant amer des agrumes est la naringine, qui peut \u00eatre d\u00e9grad\u00e9e par la naringinase en deux \u00e9tapes : dans la premi\u00e8re \u00e9tape, l'\u03b1-L-rhamnosidase hydrolyse la naringine en rhamnose et purunine ; dans la seconde \u00e9tape, la \u03b2-D-glucosidase hydrolyse la prunine en naring\u00e9nine et glucose sans go\u00fbt amer. Le m\u00e9canisme d'hydrolyse est illustr\u00e9 \u00e0 la figure 1. Par la suite, les chercheurs ont obtenu la naringinase \u00e0 partir d'autres animaux et plantes. Outre les animaux et les plantes, la naringinase est plus largement pr\u00e9sente dans les micro-organismes. La naringinase actuellement utilis\u00e9e dans la recherche et la production industrielle est \u00e9galement principalement d\u00e9riv\u00e9e de micro-organismes. Parmi eux, les champignons naturels sont la principale source de naringinase, comme Aspergillus niger, Aspergillus oryzae et Penicillium. Une petite quantit\u00e9 de naringinase est d\u00e9riv\u00e9e de la levure. D'autres naringinases sont d\u00e9riv\u00e9es de bact\u00e9ries, dont les propri\u00e9t\u00e9s enzymatiques et le champ d'application sont tr\u00e8s diff\u00e9rents de ceux des champignons. L'application initiale \u00e9tait le d\u00e9sam\u00e9risation des jus d'agrumes. La naringine est la principale substance am\u00e8re des jus d'agrumes. Son seuil d'amertume dans l'eau et le jus est d'environ 20 ppm, et son seuil peut atteindre 50 ppm dans certains jus d'agrumes. Cela montre que lorsque sa teneur atteint 1,5 ppm, les personnes ressentent une sensation d'amertume. Par cons\u00e9quent, dans le traitement des jus d'agrumes et d'autres fruits, le traitement de d\u00e9sam\u00e9risation est un processus indispensable. La naringinase est une enzyme tr\u00e8s efficace qui peut hydrolyser la naringine et d'autres substances am\u00e8res, et la naringinase peut bien atteindre l'objectif de d\u00e9sam\u00e9risation. Huang Gaoling et al. ont utilis\u00e9 la naringinase pour d\u00e9sam\u00e9riser le jus de pomelo Guanxi honey et l'hydrolyser \u00e0 60 \u2103 et \u00e0 un pH de 3,6 pendant 100 minutes. Le taux de d\u00e9sam\u00e9risation du jus peut atteindre plus de 97%. Chen Hong et al. ont utilis\u00e9 Aspergillus aculeatus JMUdb058 pour obtenir de la naringinase par fermentation en milieu solide et l'ont utilis\u00e9e pour d\u00e9sam\u00e9riser des jus de fruits. Le taux de d\u00e9sam\u00e9risation a atteint 99,6% et un tr\u00e8s bon effet de d\u00e9sam\u00e9risation a \u00e9t\u00e9 obtenu.<\/h4>\r\n\r\n\r\n\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-4471\" src=\"https:\/\/longchangchemical.com\/wp-content\/uploads\/2021\/03\/image-7.png\" alt=\"\" \/><\/figure>\r\n\r\n\r\n\r\n<h4 class=\"wp-block-heading\">En m\u00eame temps, comme la naringinase contient de l'\u03b1-L-rhamnosidase, elle peut \u00eatre utilis\u00e9e pour produire sp\u00e9cifiquement du rhamnose et de la purunine. Le rhamnose est une sorte de pentose m\u00e9thylique. Il peut \u00eatre utilis\u00e9 comme interm\u00e9diaire m\u00e9dicamenteux pour synth\u00e9tiser le cardiotonique et l'\u00e9pice Furaneol. Il peut \u00e9galement synth\u00e9tiser des ar\u00f4mes et \u00eatre utilis\u00e9 en m\u00eame temps comme \u00e9dulcorant. Il peut \u00e9galement \u00eatre utilis\u00e9 comme agent de test de p\u00e9n\u00e9tration intestinale. Il a un effet anticanc\u00e9reux \u00e9vident. Wei Shenghua et al. ont utilis\u00e9 la naringinase et des cellules de levure au repos comme catalyseurs pour transformer la naringine par une m\u00e9thode biologique en deux \u00e9tapes afin de pr\u00e9parer des cristaux de rhamnose avec une fraction de masse sup\u00e9rieure \u00e0 98,5%. La purunine, un type de flavono\u00efde, a des fonctions uniques dans le domaine des activit\u00e9s immunitaires, anticanc\u00e9reuses, antivirales et antioxydantes. Par cons\u00e9quent, dans le domaine de l'alimentation et de la m\u00e9decine, la purunine a une valeur d'application importante. Hu Qunfang et d'autres ont utilis\u00e9 la fermentation en milieu solide pour produire de l'\u03b1-L-rhamnosidase, et ont effectu\u00e9 la biotransformation de la naringine dans des conditions appropri\u00e9es, et la teneur de la purunine dans le produit \u00e9tait sup\u00e9rieure \u00e0 95%.<\/h4>\r\n\r\n\r\n\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-4470\" src=\"https:\/\/longchangchemical.com\/wp-content\/uploads\/2021\/03\/image-6.png\" alt=\"\" \/><\/figure>\r\n\r\n\r\n\r\n<h4 class=\"wp-block-heading\">L'activit\u00e9 r\u00e9active de la naringinase peut \u00e9galement \u00eatre utilis\u00e9e pour am\u00e9liorer la saveur du vin. L'\u03b1-L-rhamnosidase d\u00e9compose d'abord ces pr\u00e9curseurs non volatils pour obtenir le \u03b2-D-Glucoside monoterp\u00e9no\u00efde, puis la \u03b2-D-glucosidase continue \u00e0 se d\u00e9composer pour lib\u00e9rer les monoterp\u00e9no\u00efdes, qui ont un effet significatif sur l'am\u00e9lioration de l'ar\u00f4me du vin. Par exemple, la chloropolysporine est un antibiotique glycopeptidique d\u00e9glycosyl\u00e9 qui inhibe fortement les bact\u00e9ries Gram-positives. Sankyo et al. ont d\u00e9couvert que l'activit\u00e9 de la rhamnosidase dans la naringinase peut \u00eatre utilis\u00e9e pour synth\u00e9tiser l'antibiotique, et ont constat\u00e9 que l'utilisation combin\u00e9e d'antibiotiques chloropolysporine C et d'antibiotiques lactamines peut renforcer efficacement son effet antibact\u00e9rien sur le staphylocoque. Beekwilder et al. ont obtenu la rhamnosidase d'une bact\u00e9rie lactique Lactobacillus plantarum et ont utilis\u00e9 l'enzyme dans la fermentation de la pulpe de tomate. Ils ont constat\u00e9 qu'elle pouvait \u00e9liminer le rhamnose dans la pulpe de tomate et am\u00e9liorer la r\u00e9action de biotransformation des flavono\u00efdes. Par cons\u00e9quent, les bact\u00e9ries lactiques peuvent augmenter le taux de biotransformation des flavono\u00efdes dans le syst\u00e8me digestif humain.
